I love the Mediterranean taste of oregano and garlic (if you haven't guessed yet!). This chicken sandwich recipe combines both of those flavors with a bit of lemon for delicious zesty chicken.
Good Tzatziki Sauce is a must with the chicken. The yogurt balances out the spices wonderfully.
Mix together the olive oil, lemon juice, oregano, garlic, and salt in a plastic bag.
Chop up the chicken into small easily cooked pieces, and let it chicken breast marinate in the oil mixture in the fridge for at least 1-2 hours. Overnight is ideal.
Cook the chicken pieces in a medium sized saucepan on the stove.
Slice the cooked chicken up into nice thin slices suitable for a sandwich. Wrap up your chicken slices and about 2 tablespoons of tzatziki sauce in each piece of pita bread.
It should make about three sandwiches.

I was inspired by Heart of Palm dip. Heart of Palm dip tastes great with pita chips, and bread, but its really greasy; not the sort of thing you can eat regularly!
I adapted the recipe, cut down on the grease, and it makes a delicious sandwich!
Drain the heart of palm, and chop it up as finely as you want. Remember its going in a sandwich, so you don't want overly large chunks.
Heat skillet over medium heat. Slightly brown your heart of palm and onion pieces. Lower heat.
Mix in the yogurt, mayonaise, and mozzarella. Stir and cook until the veggies are well coated, and the mozzarella is melted.
Fill your pitas with the resulting yummy heart of palm "salad." Depending on how big your pitas are, and how generous you want to be, this will make enough for 2-3 sandwiches.
